summer blackberry popsicles

We have another check on our summer checklist! With outside temps in upper-90s and a refrigerator full of fresh blackberries that we picked from the Larriland Farm in Maryland, we decided it was the perfect time to make our homemade popsicles.

We decided on this recipe featured in Lottie + Doof (our version of the recipe is below.) We used a cute popsicle mold that a dear friend gave me after seeing homemade popsicles on our checklist. The result was pure blackberry honey and yogurt yumminess.

Blackberry Summer Pops

1/3 cup water
1/3 cup sugar
1 1/2 cups of fresh blackberries
1/2 cup plain yogurt
3 teaspoons honey
splash of lemon juice

Heat sugar and water in a saucepan until the sugar dissolves. Chill the simple syrup for about an hour. Puree the blackberries until smooth. Strain the puree over a bowl using a rubber spatula. The goal is to remove the solids and seeds. Add the simple syrup, yogurt, honey, and lemon juice to the puree and mix to blend.  Fill your molds with the mixture and freeze overnight.

Voila! Yummy blackberry frozen popsicles, perfect for summer.

Ours made four large popsicles. (The Lottie + Doof version makes 10.)
